I am so glad that someone invented the dehydrator! It is very useful when it comes to developing creative beautiful recipes, such as this one. It really may seem more complicated then it is. Once you have all the ingredients prepared, it’s just a matter of blending, mixing and let the dehydrator do the rest.
Let’s do it!
8 tbsp of overnight soaked organic hazelnuts
12 tbsp of sprouted and dehydrated organic buckwheat
2 organic zucchinis
1 small organic red bell pepper
1/4 organic garlic clove
1 organic pitless date
1 tbsp of organic apple cider vinegar
2 tsp of sea salt
a pinch of organic cayenne pepper
a pinch of organic turmeric powder
a pinch of organic cumin seeds
1 handful of organic fresh basil
Start by blending the buckwheat into flour and putting aside. Now, blend the hazelnuts, until they break down into very little pieces. Then, add the rest of the ingredients (apart from the buckwheat) and continue blending, until you get a moist mixture. Put it in a bowl and add the buckwheat, mixing it well.
You can add extra herbs if you wish. Now, shape the mixture into small balls (the bigger you do them, the longer it will take to dehydrate).
Dehydrate it for three up to six hours, if you want a dry result. If you forget to take them out, don’t worry, it won’t burn, eheh!
Here they are, our veggieballs coming right out of the dehydrator. We didn’t want to wait for too long, so we only left them for about half an hour. You can see that they didn’t get too dark. They taste great anyway, but I like them a bit more crunchy.

- 2 tsp sea salt
- 1 pinch organic cayenne pepper
- some organic turmeric powder
- 1 tbsp organic cumin seeds
- 1 handful organic fresh basil
- 1 tbsp organic apple cider vinegar
- 12 tbsp organic dehydrated buckwheat sprouts
Put the hazelnuts in a high-speed blender and blend them coarsely
Add the rest of the ingredients to the Blender and blend it
Blend the organic buckwheat sprouts and start adding it to the mixture.
Shape small balls and dehydrate them at 115ºF for 3 up to 6 hours
