Vegan 'Scrambled Eggs'

  • 40 g organic fine grated carrot
  • 200 g organic smashed tofu
  • 1 tbsp organic white rice miso
  • 300 g organic boiled well ground sweet corn
  • a pinch of organic garlic powder
  • a pinch of organic dry coriander
  • a pinch of organic herbes de provence
  • a pinch of organic cayenne pepper
  • a pinch of organic turmeric powder
  • some organic fresh herbs
  • a pinch of sea salt


  1. Sauté the carrot in a frying pan, with a bit of water.

  2. When the carrot turns soft, add the tofu and the miso.

  3. Mix it well and let it cook. Everytime it gets stuck to the pan, put a bit of water.

  4. Add the corn slowly to the mixture, for you to be able to see if the consistency pleases you, and mix it.

  5. Put all the seasonings ( except the fresh herbs), check the flavor and turn off the heat. Add the herbs.
