Millet Banana Walnut Porridge Sugar/Gluten Free

  • 1/3 cup millet soaked 12-24 hours, with kombu seaweed
  • 2 mashed ripe bananas
  • 1 banana cut in slices
  • 2 tbsp walnuts chopped in pieces
  • 1 coffee spoon orange zest
  • 1 tsp cinnamon
  • 5 cups pure water
  • 1 coffee spoon sea salt


  1. Cook the millet in water, till it becomes moist and creamy. 

  2. Add the mashed bananas, the zest, the cinnamon and the salt. Let it cook for more 5-10 minutes until you get the texture you wish.

  3. In a frying pan, toast the walnuts, with a pinch of salt.

  4. Serve the porridge, adding the banana slices, the walnuts and a bit more of cinnamon sprinkled.
