Raw Chia Peach Coconut Pudding

  • 3/4 cup pure water
  • 15 g grated coconut
  • 1/4 cup chia seeds
  • 3 pitted dates
  • 3 peaches
  • 1/4 tsp grated lemon zest
  • pinch grated ginger
  • mint leaves
  • pinch sea salt


  1. Blend the water with the coconut and strain it, taking away the solid part.

  2. Then, blend the coconut drink with 1 date, a pinch of salt, the ginger, half of the lemon zest and some mint leaves.

  3. In a bowl, mix the coconut mixture with the chia seeds and let it rest for about 20-30 minutes, till it gets a thicker consistency (you may put in the freezer to accelerate the process).

  4. Blend 2 1/2 peaches and 1 date. 

  5. In a glass, put a bit of the chia mixture, followed by some peach slices.

  6. Add the rest of the chia mixture and cover with the peach cream.

  7. On top, add some peach slices, the rest of the lemon zest, 1 date cut in pieces and some mint leaves.
