Marinated & Dehydrated Mushrooms

  • 3 cups mushrooms
  • 1 tbsp barley miso
  • 1 tbsp chopped garlic clove
  • 1 pinch sea salt
  • 1 pinch curry, basil, coriander, paprika powders
  • fresh herbs
  • pure water


  1. Put all the ingredients in a bowl, except the water, and mix them very well.

  2. Cover with water and let it marinate for 8-12 hours or overnight, in a cold environment.

  3. Put the mushrooms (without the marinade water) in a dehydrator tray, covered with parchment paper, and add more seasonings that you like

  4. Dehydrate them at 115ºF/46ºC, for about 4-6 hours.
