Lentil Turmeric Soup

Ingredients

  • 150 g onion
  • 150 g carrot
  • 150 g butternut squash
  • 100 g red lentils
  • 1 handful fresh parsley
  • 1 piece kombu seaweed
  • 1 tbsp turmeric powder
  • a pinch cayenne pepper
  • 1 tsp plum vinegar
  • some soft sprouts fennel, alfalfa, beetroot or purple kale
  • 1 tbsp sea salt
  • 1 L pure water

Instructions

  1. Wash, peel and cut the legumes, then put them in the pan.

  2. Add the lentils thoroughly washed, the turmeric, the kombu seaweed and, at last, the water. Let it boil for 15 minutes.

  3. Add the vinegar, the salt, and the parsley, blending them all until they’re creamy.

  4. Garnish with some sprouts.
