Strawberry Jam

  • 200 g strawberries
  • 7 tbsp brown rice syrup
  • 1/2 tsp lemon zest
  • 1 cinnamon stick
  • a pinch cinnamon powder


  1. Cook the strawberries in a pan with some water (just enough to cover the bottom of the pan) and the cinnamon stick.

  2. As they cook, mash the strawberries with a fork.

  3. Add all the other ingredients, except the cinnamon and the mint. When the mixture gets thick enough, turn off the heat.

  4. Add the rest of the ingredients and let it rest for a couple of minutes. Take the cinnamon stick and the mint leaf out.
